"Purumentachem Fest," is a traditional Goan festival associated with the preparation and storage of food for the monsoon season. Pickles

 A.K.A Lonche in local language are loved by Goans in their daily meal platter. Various pickles made from mangoes, lemons, and other vegetables are prepared and stored before monsoon arrives in Goa. 

Spice Pastes and Masalas

 Spices are the crux of Goan cuisine. Goans like their food with spices and distinct flavours and hence spice pastes, such as recheado masala, vindaloo masala etc stored so that they don’t miss out on pleasure of tasteful meals during rainy season. 

Papads (Papadums)

Thin, crisp, round snacks made from lentil flour and spices are sun-dried and stored. Papads are usually served as sides with the main course of the meal. 

Rice

Rice to Goan plate is what oxygen is to human life. It’s the stable food of Goan and daily meal is incomplete without it. Different varieties of rice are stocked up before the arrival of monsoons in Goa. 

Pulses and Lentils

Various pulses and lentils are stored to ensure a steady supply for making curries and other dishes.

Dry Fish

Fish is a vital part of Goan appetite. Goans are not only fond of eating fish but also consider it to be an important source of protein. They are dry and store fish as fishing is not feasible during the month of monsoon in Goa. 

Sol (Dried Kokum)

Used in Goan curries and beverages, dried kokum is stored for its tangy flavour and yes Kokum deserves a special mention as no other food item is comparable when it comes to versatility in culinary. 

These preparations ensure that Goan families have a well-stocked pantry to last through the monsoon months when fresh produce and other supplies may be less accessible.
